Description

Avocado and Egg Toast is a nutritious and delicious breakfast option that combines creamy avocado with perfectly cooked eggs on toasted bread.

Ingredients

Scale
  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)
  • Lemon juice (optional)

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, bring a small pot of water to a boil.
  3. Carefully crack the eggs into the boiling water and poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.
  4. In a bowl, mash the ripe avocado with a fork and season with salt, pepper, and lemon juice if desired.
  5. Spread the mashed avocado evenly over the toasted bread.
  6. Once the eggs are done, remove them from the water and place one egg on each slice of avocado toast.
  7. Sprinkle with red pepper flakes if desired and serve immediately.

Notes

  • For a creamier texture, you can add a splash of olive oil to the mashed avocado.
  • Feel free to add toppings like sliced tomatoes, radishes, or microgreens for extra flavor and nutrition.
  • This recipe can be easily doubled or halved depending on the number of servings needed.
