Instructions
- Toast the slices of whole grain bread until golden brown.
- While the bread is toasting, bring a small pot of water to a boil.
- Carefully crack the eggs into the boiling water and poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.
- In a bowl, mash the ripe avocado with a fork and season with salt, pepper, and lemon juice if desired.
- Spread the mashed avocado evenly over the toasted bread.
- Once the eggs are done, remove them from the water and place one egg on each slice of avocado toast.
- Sprinkle with red pepper flakes if desired and serve immediately.
