A flavorful and easy recipe for a Beef Pepper Rice Bowl, perfect for a quick meal.

- 1 lb lean ground beef (or thinly sliced steak)
- 2 tbsp olive oil (divided)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups cooked rice (white, brown, or cauliflower rice for low-carb)
- ¼ cup low-sodium soy sauce
- 2 tbsp oyster sauce (optional for richness)
- 1 tbsp hoisin sauce (or honey for natural sweetness)
- 1 tbsp rice vinegar (or lime juice)
- 1 tsp sesame oil
- ½ tsp ground black pepper
- 1 tsp cornstarch + 2 tbsp water (for thickening, optional)
Instructions
- Heat 1 tbsp olive oil in a skillet or wok over medium-high heat.
- Add ground beef, breaking it apart as it cooks. Season lightly with salt & pepper. Once browned and cooked through, remove and set aside.
- In the same skillet, add the remaining oil. Stir-fry onion and bell peppers for 3–4 minutes until slightly tender but still crisp. Add garlic and sauté 1 more minute.
- In a bowl, whisk together soy sauce, oyster sauce, hoisin (or honey), rice vinegar, sesame oil, and black pepper. If you like it thicker, mix in cornstarch slurry.
- Return beef to the skillet with the veggies. Pour in the sauce, stirring until everything is well coated and heated through.
- Spoon beef and peppers over warm rice. Garnish with sesame seeds or chopped green onions if desired.

- Swap beef for ground turkey or chicken for a lighter option.
- Add extra veggies like broccoli, snap peas, or zucchini.
