Ingredients

  • 1 lb lean ground beef (or thinly sliced steak)
  • 2 tbsp olive oil (divided)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups cooked rice (white, brown, or cauliflower rice for low-carb)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce (optional for richness)
  • 1 tbsp hoisin sauce (or honey for natural sweetness)
  • 1 tbsp rice vinegar (or lime juice)
  • 1 tsp sesame oil
  • ½ tsp ground black pepper
  • 1 tsp cornstarch + 2 tbsp water (for thickening, optional)

Instructions

  1. Heat 1 tbsp olive oil in a skillet or wok over medium-high heat.
  2. Add ground beef, breaking it apart as it cooks. Season lightly with salt & pepper. Once browned and cooked through, remove and set aside.
  3. In the same skillet, add the remaining oil. Stir-fry onion and bell peppers for 3–4 minutes until slightly tender but still crisp. Add garlic and sauté 1 more minute.
  4. In a bowl, whisk together soy sauce, oyster sauce, hoisin (or honey), rice vinegar, sesame oil, and black pepper. If you like it thicker, mix in cornstarch slurry.
  5. Return beef to the skillet with the veggies. Pour in the sauce, stirring until everything is well coated and heated through.
  6. Spoon beef and peppers over warm rice. Garnish with sesame seeds or chopped green onions if desired.
