Cheesy Mashed Potato Puff Bites are a must-try treat that combines creamy mashed potatoes with gooey cheese, making them a perfect appetizer or snack.

- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded mozzarella cheese (or a mix of mozzarella and cheddar)
- ¼ cup Parmesan cheese, grated
- 2 large eggs, lightly beaten
- ¼ cup sour cream or Greek yogurt
- 2 tablespoons melted butter
- 2 tablespoons chopped chives or parsley
- Salt and black pepper, to taste
- Optional: a pinch of garlic powder or paprika for extra flavor
Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin or mini muffin pan lightly with butter or nonstick spray.
- In a large bowl, combine mashed potatoes, eggs, sour cream, Parmesan, melted butter, herbs, and seasoning. Stir until smooth and creamy.
- Fold in half of the shredded mozzarella (save the rest for topping).
- Scoop spoonfuls of the mixture into each muffin cup, filling about ¾ full. Sprinkle remaining mozzarella on top.
- Bake for 25–30 minutes, or until the tops are puffed and golden brown with crispy edges.
- Let cool for 5 minutes, then gently remove from the pan. Serve warm — the melted cheese pull is unreal!
