  • 1/2 tsp turmeric
  • 1/2 tsp chili powder or cayenne (optional)
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 cup mayonnaise
  • 23 cloves garlic, finely minced or grated
  • 1 tbsp lemon juice (for garlic sauce)
  • 1 tbsp yogurt (optional for creaminess)
  • Pinch of salt (for garlic sauce)
  • 12 tbsp water (to thin garlic sauce if needed)
  • Pita or flatbread (for serving)
  • Tomato slices (for serving)
  • Fresh parsley or lettuce (for serving)
  • Pickles (optional but highly recommended)

Instructions

  1. Prepare the Chicken Marinade: In a bowl, mix olive oil, lemon juice, yogurt, garlic, and all spices. Stir until smooth. Add the chicken and coat well. Cover and marinate for at least 1 hour, but overnight gives the best flavor.
  2. Cook the Chicken: Option A — Pan Cook: Heat a skillet over medium-high heat. Add 1 tbsp oil. Cook chicken pieces 5–6 minutes per side until golden and fully cooked. Let it rest for 5 minutes, then slice thinly. Option B — Oven: Bake at 200°C / 400°F for 25–30 min, then broil 2–3 minutes for crispy edges. Option C — Air Fryer: 190°C / 375°F for 16–18 min.
  3. Make the Garlic Sauce: Combine mayonnaise, lemon juice, garlic, yogurt, and salt. Add a splash of water for a pourable consistency. Mix until smooth and creamy.
  4. Assemble the Shawarma Wrap: Warm pita or flatbread. Add sliced chicken. Top with tomatoes, parsley or lettuce, and pickles (optional). Drizzle generously with garlic sauce. Wrap tightly and enjoy!
