- 4 boneless, skinless chicken breasts (or thighs)
- Salt and black pepper (to taste)
- 1 tsp paprika (optional)
- 2 tbsp olive oil
- 3 tbsp butter
- 4–5 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- ½ cup chicken broth
- 1 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional, for a kick)
- 1 cup baby spinach (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry and season with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium. Add butter. Stir in garlic and sauté for 30–60 seconds until fragrant (don’t burn!). Pour in chicken broth and heavy cream, stirring to combine. Add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the sauce is smooth and creamy.
- Return chicken to the skillet, spoon sauce over the top. Simmer for 3–5 minutes until chicken is heated through and sauce slightly thickens. (Optional) Stir in spinach and cook until wilted.
- Garnish with fresh parsley and extra Parmesan. Serve over pasta, rice, mashed potatoes, or with crusty bread to soak up the sauce.
Notes
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Use chicken thighs for a juicier, more tender dish.
- For a lighter version, substitute half of the cream with unsweetened almond milk or low-fat milk.
