Description

A delicious creamy shrimp dish featuring sun dried tomatoes and Parmesan cheese.


Ingredients

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup sun dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp chopped parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat then sauté onion for 4 minutes until soft.
  2. Add garlic and red pepper flakes and cook for 30 seconds while stirring.
  3. Add shrimp, season with salt and pepper, then cook 2 minutes per side until pink.
  4. Stir in sun dried tomatoes, cream, and Italian seasoning then simmer for 5 minutes.
  5. Add Parmesan and stir until thickened, then garnish with parsley and rest before serving.
