- 1 pound baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0 teaspoon black pepper
- 0 teaspoon garlic powder
- 1 teaspoon fresh rosemary or thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment or lightly grease it.
- Cut the baby potatoes in half and place them in a large bowl.
- Add olive oil, salt, pepper, garlic powder, and herbs if using. Toss until all pieces are evenly coated.
- Arrange the potatoes cut side down on the baking sheet in a single layer for maximum crispiness.
- Roast for 25 to 30 minutes until golden brown on the bottom.
- Flip the potatoes and roast for another 5 to 10 minutes to crisp up the skins.
- Serve immediately with an optional sprinkle of fresh herbs or parmesan.
Notes
- Make sure the potatoes are well spaced on the baking sheet for even cooking.
