Description

Deliciously crispy roasted baby potatoes perfect as a side dish.


Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0 teaspoon black pepper
  • 0 teaspoon garlic powder
  • 1 teaspoon fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment or lightly grease it.
  2. Cut the baby potatoes in half and place them in a large bowl.
  3. Add olive oil, salt, pepper, garlic powder, and herbs if using. Toss until all pieces are evenly coated.
  4. Arrange the potatoes cut side down on the baking sheet in a single layer for maximum crispiness.
  5. Roast for 25 to 30 minutes until golden brown on the bottom.
  6. Flip the potatoes and roast for another 5 to 10 minutes to crisp up the skins.
  7. Serve immediately with an optional sprinkle of fresh herbs or parmesan.
