- 2 tbsp butter
- 2 large yellow onions, thinly sliced
- 1 tsp sugar
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 1 tsp Worcestershire sauce (optional, for depth)
- 1 cup shredded Gruyère cheese (or Swiss, mozzarella, or provolone)
- ¼ cup shredded Parmesan cheese
- 1 sheet puff pastry, thawed (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- 1 tsp water
Instructions
- In a large skillet, melt butter over medium-low heat. Add sliced onions, sugar, salt, and pepper. Cook slowly for 20–25 minutes, stirring occasionally, until onions are soft and golden brown. Stir in thyme and Worcestershire sauce. Remove from heat and cool slightly.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Unroll or unfold the puff pastry on a lightly floured surface. Evenly spread the cooled onion mixture over the pastry. Sprinkle shredded Gruyère and Parmesan cheese over the onions.
- Starting from the long side, tightly roll the pastry into a log. Brush the seam with a little water to seal. Slice into ½-inch thick rounds and place on the prepared baking sheet, cut side up.
- Brush each swirl with the egg wash (egg beaten with 1 tsp water). Bake for 18–22 minutes, or until golden brown and puffed. Let cool slightly before serving.
Notes
- You can make the caramelized onions ahead of time and refrigerate for up to 3 days.
- Add cooked bacon or diced mushrooms for extra flavor.
- Freeze unbaked swirls, then bake from frozen (add 5 extra minutes).
