Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ teaspoon garlic powder (optional)
- ½ cup (1 stick) cold unsalted butter, cubed
- ¾ cup cold buttermilk
- 1 to 1½ cups diced or thin-sliced ham
- 1½ cups shredded cheese (cheddar, Swiss, Gruyère, or a blend)
- 2 tablespoons melted butter (for brushing)
Instructions
- Preheat oven to 425°F (220°C).
- In a mixing bowl, whisk together flour, baking powder, salt, and garlic powder.
- Add the cold butter cubes and cut them into the dry mixture using a pastry cutter or fingertips until the texture is crumbly.
- Pour in the cold buttermilk and mix until the dough comes together.
- Turn the dough onto a floured surface and gently knead 5–6 times.
- Roll the dough into a large rectangle about ½ inch thick.
- Sprinkle cheese evenly over half the dough.
- Add ham evenly on top of the cheese.
- Fold the dough over to sandwich the filling.
- Roll gently again to seal.
- Use a round cutter (2.5–3 inches) to cut out biscuits.
- Re-roll scraps carefully and continue cutting.
- Place biscuits on a parchment-lined baking sheet.
- Brush the tops with melted butter.
- Bake 12–15 minutes, or until golden and puffed.
Notes
- Keep butter and buttermilk very cold for ultimate flakiness.
- Don’t overwork the dough; it keeps biscuits tender.
- Add a pinch of paprika or cayenne if you like a little heat.
- Swap ham for turkey, bacon, or cooked sausage.
