Ingredients

  • ½ cup whole wheat breadcrumbs or panko
  • ¼ cup cornstarch
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • Olive oil spray
  • ⅓ cup Greek yogurt or light mayonnaise
  • 3 tablespoons sweet chili sauce
  • 12 teaspoons sriracha (adjust to taste)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon rice vinegar or lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut chicken into strips or bite-sized pieces. Season lightly with salt and pepper.
  3. Dip chicken into cornstarch, then egg, then coat with breadcrumbs mixed with garlic powder and paprika.
  4. Place chicken on baking sheet. Lightly spray with olive oil. Bake for 18–22 minutes, flipping halfway, until golden and cooked through.
