Description

A delicious baked chicken dish layered with eggplant, prosciutto, and fresh mozzarella.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 1 medium eggplant, sliced (about 2 cups)
  • 4 oz prosciutto or ham
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté the eggplant slices until golden brown and softened (about 5-7 minutes). Remove from heat.
  3. Season chicken breasts with salt and pepper on both sides.
  4. Layer each chicken breast with prosciutto followed by sautéed eggplant slices.
  5. Top with fresh mozzarella slices.
  6. Transfer to the preheated oven and bake for 25-30 minutes until the chicken is cooked through.
  7. Garnish with fresh basil before serving.
