Ingredients

- 4 boneless, skinless chicken breasts (about 1 lbs)
- 1 medium eggplant, sliced (about 2 cups)
- 4 oz prosciutto or ham
- 8 oz fresh mozzarella cheese, sliced
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté the eggplant slices until golden brown and softened (about 5-7 minutes). Remove from heat.
- Season chicken breasts with salt and pepper on both sides.
- Layer each chicken breast with prosciutto followed by sautéed eggplant slices.
- Top with fresh mozzarella slices.
- Transfer to the preheated oven and bake for 25-30 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
