Description

Hobo Casserole is a comforting and easy-to-make meal that combines ground beef, potatoes, and cheese, baked to perfection.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 4 medium potatoes, peeled and thinly sliced (about ⅛-inch thick)
  • 2 cups shredded cheddar cheese (or a mix of cheddar & mozzarella)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is tender (about 6–7 minutes). Add garlic and cook for 1 more minute. Drain excess grease.
  3. Stir in soup, milk, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Remove from heat.
  4. Layer half of the sliced potatoes in the prepared baking dish. Spread half of the beef mixture on top and sprinkle 1 cup cheese over beef. Repeat with remaining potatoes, beef mixture, and finish with cheese.
  5. Cover dish with foil and bake for 45 minutes. Remove foil and bake an additional 15–20 minutes, until potatoes are tender and cheese is bubbly and golden.
  6. Let casserole rest for 5 minutes before serving and garnish with parsley.

Notes

  • Veggie Boost: Add a layer of corn, green beans, or mushrooms between the beef and potatoes.
  • Spicy Kick: Add a pinch of cayenne pepper or chili flakes.
  • Cheesy Upgrade: Stir some Velveeta or cream cheese into the beef mixture for extra creaminess.
