Honey Butter Cornbread Poppers are delightful mini cornbread bites drizzled with a sweet honey butter glaze, perfect for snacking or serving alongside meals.


Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk (or 1 cup milk + 1 tsp vinegar)
  • 2 large eggs
  • ⅓ cup melted butter (unsalted)
  • ¼ cup honey
  • ¼ cup melted butter (for glaze)
  • 2 tbsp honey (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin pan or use silicone molds.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, eggs, melted butter, and honey.
  4. Pour wet ingredients into dry ingredients and stir just until combined (don’t overmix).
  5. Spoon batter into the mini muffin cups, filling each about ¾ full.
  6. Bake for 10–12 minutes, or until golden and a toothpick comes out clean.
  7. While baking, whisk together melted butter, honey, and a pinch of salt for the glaze.
  8. Once baked, brush or toss the warm poppers with the honey butter glaze.
  9. Serve warm for maximum gooey, buttery goodness.
