- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk (or 1 cup milk + 1 tsp vinegar)
- 2 large eggs
- ⅓ cup melted butter (unsalted)
- ¼ cup honey
- ¼ cup melted butter (for glaze)
- 2 tbsp honey (for glaze)
- Pinch of salt (for glaze)
Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin pan or use silicone molds.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, eggs, melted butter, and honey.
- Pour wet ingredients into dry ingredients and stir just until combined (don’t overmix).
- Spoon batter into the mini muffin cups, filling each about ¾ full.
- Bake for 10–12 minutes, or until golden and a toothpick comes out clean.
- While baking, whisk together melted butter, honey, and a pinch of salt for the glaze.
- Once baked, brush or toss the warm poppers with the honey butter glaze.
- Serve warm for maximum gooey, buttery goodness.

- Add corn kernels or jalapeños for a savory twist.
- Sprinkle sea salt flakes on top after glazing for sweet-salty contrast.
