Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz sturdy tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 fresh jalapeño, sliced
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup guacamole
  • 1 cup salsa
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. Cook in a skillet with olive oil over medium heat for about 6-8 minutes per side until golden brown and cooked through.
  3. Allow chicken to rest briefly, then shred with two forks.
  4. On a large baking sheet, layer tortilla chips, followed by shredded chicken, cheddar cheese, and jalapeños.
  5. Bake for 10 minutes until cheese is bubbly and melted.
  6. Remove from oven; drizzle with sour cream and guacamole, garnish with cilantro if desired.
