Description

Louisiana Voodoo Fries are a spicy and creamy dish featuring crispy fries topped with a rich Cajun cream sauce and optional toppings.


Ingredients

  • 1 bag (about 1 lb / 450g) frozen French fries (or hand-cut potatoes)
  • 2 tbsp vegetable oil (if baking or air frying)
  • ½ tsp salt
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup heavy cream (or half & half)
  • ½ cup milk
  • ½ cup shredded pepper jack cheese
  • ½ cup shredded cheddar cheese
  • 1 tbsp Cajun seasoning (store-bought or homemade)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Dash of hot sauce (optional)
  • Salt and pepper to taste
  • Crumbled bacon (optional)
  • Chopped green onions or parsley (optional)
  • Extra Cajun seasoning for garnish (optional)
  • Ranch drizzle or chipotle ranch sauce (optional)

Instructions

  1. Cook the Fries: Bake or Air Fry the fries according to package directions until golden and crispy. Lightly season with salt and set aside.
  2. Make the Cajun Cream Sauce: In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute to make a roux (don’t let it brown). Slowly whisk in heavy cream and milk, stirring constantly until smooth. Add Cajun seasoning, garlic powder, onion powder, and hot sauce (if using). Stir in cheeses gradually until melted and creamy. Taste and adjust seasoning with salt and pepper.
  3. Assemble the Voodoo Fries: Place cooked fries on a serving platter or cast-iron skillet. Pour the Cajun cheese sauce generously over the fries. Sprinkle with extra Cajun seasoning, parsley, or green onions. (Optional) Drizzle with ranch or chipotle ranch for a restaurant-style finish.

Notes

  • For extra smokiness, add a pinch of smoked paprika.
  • Love spice? Swap pepper jack for Monterey Jack + extra cayenne.
