Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 ½ cups peeled, diced apples (about 2 medium apples — Granny Smith or Honeycrisp work well)
  • ½ cup chopped pecans or walnuts (optional)
  • 2 Tbsp unsalted butter (for glaze)
  • ¼ cup pure maple syrup
  • ½ cup powdered sugar (sifted)
  • ¼ tsp vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or lightly grease.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth.
  3. Whisk in the eggs one at a time, then add vanilla extract.
  4. In a separate bowl, combine flour, baking powder, salt, cinnamon, and nutmeg. Gradually fold into the wet ingredients.
  5. Gently stir in the diced apples and nuts (if using).
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
  8. Let the blondies cool completely in the pan before glazing.
  9. In a small saucepan over medium heat, melt butter and whisk in maple syrup.
  10. Remove from heat and whisk in powdered sugar, vanilla, and a pinch of salt until smooth.
  11. Pour the warm glaze over the cooled blondies and spread evenly.
  12. Let the glaze set for about 20–30 minutes, then slice into squares.
