- 4 cups low-sodium chicken broth
- 2 cups mixed vegetables (bell peppers, carrots, peas)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly coat a large baking dish with cooking spray.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent, about 3-5 minutes.
- Add mixed vegetables and chicken broth to the skillet; season with salt, pepper, thyme, and rosemary. Simmer for about 5 minutes.
- Drop dumplings evenly over the simmering mixture without overcrowding.
- Bake uncovered for 25-30 minutes until dumplings are golden brown and cooked through.
- Let cool slightly before serving.
