Ingredients

  • 4 cups low-sodium chicken broth
  • 2 cups mixed vegetables (bell peppers, carrots, peas)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a large baking dish with cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent, about 3-5 minutes.
  3. Add mixed vegetables and chicken broth to the skillet; season with salt, pepper, thyme, and rosemary. Simmer for about 5 minutes.
  4. Drop dumplings evenly over the simmering mixture without overcrowding.
  5. Bake uncovered for 25-30 minutes until dumplings are golden brown and cooked through.
  6. Let cool slightly before serving.
