Description

A delicious and flavorful Parmesan Chicken Meatloaf recipe that combines ground chicken with Italian seasonings and a cheesy filling.


Ingredients

  • 2 lbs ground chicken
  • 1 cup breadcrumbs (Italian style preferred)
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1/4 cup milk
  • 2 cups shredded mozzarella (or mozzarella cheese sticks)
  • 1/4 cup grated Parmesan (for topping)
  • Optional: melted butter mixed with parsley + garlic to brush on top

Instructions

  1. Preheat oven to 375°F (190°C) and line a loaf pan or baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, eggs, Parmesan, onion, garlic, milk, and spices & herbs. Mix well — don’t overwork the meat.
  3. Transfer half the mixture to your loaf pan and shape into a base layer. Add mozzarella cheese in a long strip down the center, then cover with the remaining chicken mixture and seal all sides. (Optional: make shallow slices across the top for that beautiful cheesy pull effect.)
  4. Sprinkle the top with extra Parmesan and brush with garlic-parsley butter (optional but heavenly). Bake for 45–55 minutes until internal temp reaches 165°F. For a golden crust, broil the last 3–4 minutes until brown & bubbly.
  5. Rest for 10 minutes, then slice and enjoy. Serve with marinara sauce for dipping, garlic mashed potatoes, or roasted veggies or salad.
