- ½ cup (115g) unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- Optional add-ins: ¼ cup chopped peanuts
- Optional add-ins: ½ cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, brown sugar, and white sugar until light and fluffy (2–3 minutes).
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together flour, oats, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture. Mix just until combined.
- Scoop dough (about 1½ tablespoons each) and place onto the prepared baking sheet, spacing cookies 2 inches apart.
- Bake for 10–12 minutes, until edges are lightly golden but centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For extra chewiness, slightly underbake.
- Use old-fashioned oats, not quick oats, for best texture.
- Chill dough 30 minutes for thicker cookies.
- Store in an airtight container up to 5 days.
