Ingredients

  • ½ cup creamy peanut butter
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • Optional add-ins: ¼ cup chopped peanuts
  • Optional add-ins: ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, brown sugar, and white sugar until light and fluffy (2–3 minutes).
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, oats, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture. Mix just until combined.
  6. Scoop dough (about 1½ tablespoons each) and place onto the prepared baking sheet, spacing cookies 2 inches apart.
  7. Bake for 10–12 minutes, until edges are lightly golden but centers are still soft.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
