- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 8 ounces cremini or white button mushrooms, sliced
- 1 cup dry brown or green lentils, rinsed
- 3 cups vegetable broth
- 1 tablespoon soy sauce or tamari
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked or sweet paprika
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1/2 cup sour cream or plain Greek yogurt
- 8 ounces egg noodles or pasta of choice
- 1 teaspoon fine sea salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh parsley, for serving
Instructions
- Heat the olive oil and butter in a large deep skillet or pot over medium heat.
- Add the chopped onion and cook until softened and translucent, stirring occasionally.
- Stir in the minced garlic and cook for 30–60 seconds, just until fragrant.
- Add the sliced mushrooms, spread them out in an even layer, and keep the heat gentle so it stays smooth and silky.
- Add the dried lentils and vegetable broth, bring to a boil, then reduce to a simmer.
- Add soy sauce, Dijon mustard, paprika, thyme, and flour; stir well to combine.
- Cook until lentils are tender, about 25-30 minutes.
- Meanwhile, cook the pasta according to package instructions; drain.
- Add the cooked pasta to the pan and toss gently until every noodle is coated in the lentil mushroom sauce.
- Taste and adjust seasoning with more salt and pepper as needed, adding a splash of extra broth if you prefer a looser sauce.
- Stir in the sour cream or yogurt until well combined.
- Sprinkle with chopped fresh parsley just before serving and enjoy warm.

- This dish can be made gluten-free by using gluten-free pasta.
